Imperial Heritage “Foudroyante” Caviar

Our signature caviar blend and the one we reach for ourselves. Foudroyante is a rare, refined marriage of Oscietra and Siberian sturgeon roe. The dark-grey pearls deliver a beautifully complex flavour — deep umami with subtle sea-urchin notes and a gentle nutty finish. Mildly salted using the traditional Malossol method, it’s elegant, balanced and genuinely special.


How to Serve

Keep the caviar chilled until ready to eat. Open just before serving and enjoy with:

  • blinis or warm toast points

  • chilled vodka or vintage Champagne

  • a touch of crème fraîche (optional)

  • or à la royale — served on the back of the hand, also known as a bump in The Seafood Café

Always use a non-metal spoon to preserve the flavour.
