Our Citrus-Cured Salmon is crafted from 100% organic Irish salmon and cured for 48 hours with sea salt, sugar, orange and blood-orange  and fresh chervil . The result is a bright, delicate cure that lifts the natural richness of the salmon without overpowering it. The flavour is clean, citrus-led and balanced, allowing the quality of the fish to shine.

Each side is cured by hand in right here North County Dublin, stacked flesh-to-flesh for an even, gentle finish. We offer this in a 200g piece, the ideal size for effortless entertaining or an elegant starter at home.

We also offer it pre-sliced or unsliced, though we recommend choosing the whole 200g piece. Keeping it intact protects the natural oils, preserves texture, and gives a better flavour. Slice straight down rather than on an angle to enjoy the full character of the salmon, the citrus and the cure.

Perfect for entertaining, gifting, or relaxed but elevated at-home dining.


Serves

200g serves 2 as a starter, or 4–6 as part of a sharing board.


How to Serve

 For best results, cut straight down into clean, even slices using a sharp knife. Serve with brown bread, crackers, blinis or soft white sourdough. Finish with pinch of rock salt, cracker of pepper,  pickles or a spoon of crème fraîche. Ready to enjoy straight from the pack.
