St. Stephen’s Day Supper – Classic Bouillabaisse Marseillaise
A rich, elegant bouillabaisse inspired by the kitchens of Marseille, built on a deep fish broth and layered with braised fennel, saffron potatoes, and a selection of beautiful Irish seafood.
It’s served with traditional rouille, crisp croutes, and grated Gruyère — everything you need for a proper, classic bouillabaisse at home.
Each supper feeds 3–4 adults and brings all the warmth and comfort of St. Stephen’s Day to the table.
Seafood selection includes:
Wild bass, redfish, prawns, and monkfish.
How to Serve
Warm the broth gently in a pot until steaming.
Add the seafood directly into the broth and heat together until everything is hot through.
Serve in warm bowls, top with rouille, float over the croutes, and finish with Gruyère.
