From the renowned Kelly family in Kilcolgan, Co. Galway, these Gigas oysters (Crassostrea gigas, or Pacific oysters) are grown in the nutrient-rich waters of Galway Bay, where the Atlantic meets Ireland’s wild west coast.
They’re known for their clean, briny flavour with a light sweetness and a hint of hazelnut — a more approachable cousin to the native oyster but with the same impeccable Kelly’s quality. Each oyster is hand-graded and carefully finished in tidal ponds for purity and consistency.
